Chewy Brownie Cookies

These are so yummy!

INGREDIENTS:
2/3 c shortening
1 1/2 c packed brown sugar
1 Tbls water
1 tsp vanilla
2 eggs
1 1/2 c flour
1/3 c cocoa
1/2 tsp salt
1/4 tsp baking soda
2 c (12 oz) semi-sweet chocolate chips

Heat oven to 375 degrees. Place a length of foil on a flat surface. In a large bowl, beat shortening, brown sugar, water and vanilla on medium speed. Add eggs and beat well. Stir together flour, cocoa, salt and soda. Gradually add to sugar mixture, beating on low speed just until blended. Stir in chocolate chips. Drop by rounded tablespoonfuls 2" apart onto ungreased cookie sheet. Bake 7-9 minutes or until set. Cookies will appear soft and moist but will harden slightly when cooled. DO NOT OVERBAKE. Cool 2 minutes. Remove from cookie sheet to foil and cool completely.
