This is so yummy! It makes a great breakfast or brunch meal! Even the kids eat it!
Potato and Cheese Frittata
INGREDIENTS:
2 tablespoons olive oil (vegetable works also)
1 bag of cubed hash brown potatoes (I don't use a whole bag, but I just add them until it "looks good"!)
1 medium onion, diced
salt and pepper to taste
1/4 cup shredded Cheddar cheese
1/4 cup shredded Colby-Jack cheese
4 eggs, beaten
**(Can also use diced ham if you wanted to)
Preheat the oven to 400 degrees F. Heat oil in a 12" skillet over medium-high heat. When the skillet is hot, add the potatoes, and fry until crispy and golden, about 15 minutes. Reduce heat to medium, and add onions. Cook, stirring, until onions are soft. Season with salt and pepper. Pour potatoes and onions into a greased baking dish. Pour eggs over the potatoes and onions and place dish in the oven for about 10 minutes, or until eggs are firm. Remove from the oven, and sprinkle shredded cheese over the top. Return to the oven for about 5 minutes, or until cheese is melted.
