This is that time of year when we are hosting or going to parties like crazy. These stuffed cherry tomatoes are a fun appetizer and are very tasty. These always go quickly!
BLT Bites
INGREDIENTS:
16-20 cherry tomatoes
1 lb bacon, cooked and crumbled
1/2 c mayonnaise
1/3 c chopped green onions
3 Tbls grated parmesan cheese
Cut a thin slice off each tomato top. Scoop out and discard pulp. Invert tomatoes onto a papertowel to drain. In a small bowl, combine all remaining ingredients and mix well. Spoon mixture into tomatoes. Refrigerate for several hours before serving.

Ok, this sounds yummy and also what I would refer to as "cute food". LOL
I have seen this recipe somewhere but never tried it. Thanks for letting me know how yummy they are-I love tomotoes!!
YUM! I made somthing like this when I "catered" for a friend's art show in college. It was just the cherry tomatoes, mayo and bacon mixed together and then topped with a little parsley sprig. It was the HIT of the party and these sound even better!
These sound delicious but time consuming. I wish I had some right now!
Beth: These really are not as time consuming as they sound! I thought the same thing the first time I tried them, but they assemble quickly!

I just read your comment about the stockings! LOL We had them up, but the baby pulled one off and on the floor-glad it missed him, or it would have been a hospital visit!
We decided that we are just going to put them up for Christmas Eve this year-too much danger lurking about with them!
That sounds delicious! I can't imagine scooping out the itty bitty tomatoes though.
