Baked Lemon Chicken

This recipe comes from my aunt, who is an excellent cook (she has given me some new recipes to try recently. After I try them I will post them here if they are any good-which I am sure they will be)


Here is her recipe for Baked Lemon Chicken.... it is very tasty and the rice is killer too!


INGREDIENTS:

1 1/2 tsp bottled minced garlic (4-5 cloves, pressed)
1 c uncooked regular rice (not instant)
8 pieces of chicken
1 (14 oz) can Swanson's chicken broth
1/4 tsp salt
1/4 tsp pepper
2 lemons


Preheat oven to 350 degrees F. Dot garlic over bottom of 9x13 pan. Pour uncooked rice evenly over garlic. Put chicken on top of rice. Pour chicken broth over everything. Sprinkle with salt and pepper. Cut each lemon into 4 slices and place 1 slice on each piece of chicken. Cover pan tightly with foil. Bake 1 1/2 hours. Remove foil and broil for a minute or two to brown chicken.


**NOTE: I never cook mine for the full 1 1/2 hours. I check it after 45 minutes and usually it is done. So my recommendation is to keep checking your chicken to be sure it doesn't over cook.
