No one in my house really likes potato salad except me, so when I have a hankerin for some tater salad I usually cut the recipe way back and make just enough for me. This recipe is sort of what my mom used to make, although I don't think she ever really had a "recipe" for it so I have had to wing it.
Potato Salad
INGREDIENTS:
8 potatoes, peeled and cubed
3 hardboiled eggs, peeled and sliced
1 c mayonnaise
3 Tbls yellow mustard
1 small onion, finely diced
2 Tbls Italian salad dressing
3 medium sized dill pickles, finely chopped
Bring a large pot of salted water to a boil. Add potatoes and cook until tender, but still firm (about 10 minutes). Drain and place in a large bowl. Cover with Italian salad dressing and place in the refrigerator for about 20-30 minutes. This marinates the potatoes and gives them a yummy flavor.
In a small bowl whisk together the mayo, mustard and onion. Now add that to the potatoes and stir until evenly coated. Gently mix in the eggs and pickles. Put back in the refrigerator until completely cool. Serve cold.
