This recipe is something my MIL has made for years and years. It is one that my husband said I had to get from her after the first time I made him pancakes using a boxed mix! I make this up, usually doubling or tripling the recipe and storing it in an airtight container. Since I double or triple this recipe, I usually dump out an approximate amount -- close to 1 1/2 c of mix and then add the "wet" ingredients.
Pancake Mix
INGREDIENTS:
1 1/4 c flour
4 Tbls sugar
2 1/2 tsp baking powder
1/4 tsp salt
Combine the above ingredients.
When ready to mix as a batter, add the following wet ingredients to the dry mixture.
1 egg, 3 Tbls oil and 1 c milk and stir well.
