Frittata

My niece made this last year for a family brunch for my mom's birthday. It was so good and Mr. Man asks me for it all the time! I asked her for her recipe and I got "I make it up as I go along!" Oh well that's just great! So I started playing around with it and I came up with this.

Frittata
INGREDIENTS:
2 c chopped zucchini
1/4 c chopped green bell pepper
1/4 c diced onion
1 Tbls olive oil
2 cloves minced garlic
8 eggs (this is a good number for my family of 5, but you could increase or decrease as needed)
1/2 c shredded pepper jack cheese (or any kind will work really)
3/4 c Evaporated milk
cooking spray

Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray (trust me, you will regret it if you don't!)
Heat oil in a skillet. Add veggies and garlic, saute until soft, stirring often (about 5 minutes).
Beat eggs and evaporated milk in a bowl. Gradually stir in zucchini mixture one spoonful at a time so that the vegetables will not cook the eggs. Pour mixture into prepared baking dish.
Bake for 30 to 35 minutes or until frittata is cooked through. Season with salt and ground black pepper, if desired. Slice and serve. We like to top ours with salsa and junk too!

I love egg dishes like this! We often have this type of dish for dinner :) Changing it up is neccessary!
