Taco Build-up

This is a quick meal to prepare and then everyone makes their own tacos from items you have set up (I have also heard this called a taco bar).

Taco Build-up
INGREDIENTS:
1 lb ground beef
fajita seasoning or taco seasoning mix (either one will work)
shredded lettuce
diced tomato
fajita-sized flour tortillas or taco shells (or both!)
shredded colby-jack cheese
salsa
sour cream
guacamole

Brown ground beef, drain off grease. Add seasoning packet. Place all the various toppings in bowls with spoons and set out. Heat up your shells. Have everyone "build" their own taco with whatever toppings they like!

I also like to serve cheese dip and tortilla chips with our tacos:

Cheese Dip
INGREDIENTS:
1 lb Velveeta cheese
1 can Rotel tomatoes
1 can cream of mushroom soup
salsa (to taste)
Tortilla chips

Cut Velveeta into chunks into a microwavable-safe bowl. Heat in microwave for 2-3 minutes. Stir. Continue heating at 2-3 minute intervals until completely melted. Add remaining ingredients and warm on low in a Crock-pot. Enjoy with the chips --OR my personal favorite - add it to your taco!
