I tried this recipe this week and it was super delicious. My kids weren't wild about all the onions. I am not an onion person normally, but these cooked up nice and were quite tasty with a bite of potato and meat! It took me about an hour to prepare and cook this meal.
Skillet Pork Chops with Potatoes and Onion
INGREDIENTS:
2 Tbls vegetable oil
4 pork chops (1/2" thick), trim fat if needed
2 Tbls flour
1/3 c grated Parmesan cheese
1/2 tsp salt
1/4 tsp pepper
4 potatoes, thinly sliced
2 medium onions, sliced
3 beef bouillon cubes
3/4 c hot water
1 Tbls lemon juice
Heat oil in a large skillet over medium heat. Coat pork chops with flour and place in skillet. Brown for about 4 minutes on each side.
In a small bowl, mix Parmesan cheese, salt and pepper. Sprinkle 1/2 the Parmesan cheese mixture over the pork chops. Add a layer of potatoes. Sprinkle remaining cheese over potatoes. Top with onion slices.
Cover skillet and reduce heat. Simmer 40 minutes or until vegetables are tender and pork chops are cooked through.
