Linguine with Asparagus, Bacon and Spinach

This is one of our favorites when fresh asparagus is in season. It is light, yet filling.

Linguine with Asparagus, Bacon and Spinach

INGREDIENTS:
1 lb linguine, cooked according to the package directions
1/3 lb bacon, cut into pieces
1/3 c olive oil
2 cloves garlic, minced
1/2 lb fresh asparagus, cut into pieces
1 (6 oz) package baby spinach leaves
1/4 c lemon juice

Cook bacon until crisp. Remove to paper towel to drain grease. Pour olive oil into same pan the bacon was cooked in. Add garlic and asparagus. Cook, stirring until fragrant (about 1-2 minutes). Add cooked pasta and toss in spinach and lemon juice. Crumble in bacon.

**I have also cut up some grilled chicken pieces and put on top of pasta.

Sounds yummy! Not sure I could get the rest of the family to try it since it has asparagus in it!
