My friend Aubrey at The Fam Five found this recipe somewhere on the internet --I apologize to whomever it originated from, I don't know who you are to give you credit!--- anyway, Aubrey told me to try it a few weeks ago and just last week I finally got around to trying it out. Let me just tell you that it was the biggest hit at my house since I found our favorite waffle recipe! Mr. Man ate so much that I almost had to roll him to bed because he couldn't move!
Zesty Crock Pot Chicken
INGREDIENTS:
4-6 boneless, skinless chicken breasts
1/2 c sour cream
1 (10.5 oz) can cream of chicken soup (undiluted)
1 (.3 oz) pkg Zesty Italian dressing mix
1 c water
1 (8 oz) pkg cream cheese, cut into 1" cubes
2 c white rice, cooked
Place chicken breasts in bottom of Crock Pot. In a small bowl, mix together soup, dressing mix and water. Stir well, then pour over chicken in Crock Pot. Cover and cook on low for 6-8 hours (**My chicken breasts were small so I ended up only cooking this 5 hours total**). Add the cream cheese for the last hour of cooking. Serve this over rice.
