Zesty Crock Pot Chicken

My friend Aubrey at The Fam Five found this recipe somewhere on the internet --I apologize to whomever it originated from, I don't know who you are to give you credit!--- anyway, Aubrey told me to try it a few weeks ago and just last week I finally got around to trying it out. Let me just tell you that it was the biggest hit at my house since I found our favorite waffle recipe! Mr. Man ate so much that I almost had to roll him to bed because he couldn't move!

Zesty Crock Pot Chicken
INGREDIENTS:
4-6 boneless, skinless chicken breasts
1/2 c sour cream
1 (10.5 oz) can cream of chicken soup (undiluted)
1 (.3 oz) pkg Zesty Italian dressing mix
1 c water
1 (8 oz) pkg cream cheese, cut into 1" cubes
2 c white rice, cooked

Place chicken breasts in bottom of Crock Pot. In a small bowl, mix together soup, dressing mix and water. Stir well, then pour over chicken in Crock Pot. Cover and cook on low for 6-8 hours (**My chicken breasts were small so I ended up only cooking this 5 hours total**). Add the cream cheese for the last hour of cooking. Serve this over rice.

Bad start to a morning... or "the baby buffer"

This is not what I was originally going to post about today, but my morning started off really poopy so I decided to share it!

First off, Lefty was pushing all my buttons this morning so I was a tad bit grumpy from that. Then as I was getting ready to take Lady Bug to school I realized I left all my office stuff in my husband's Jeep (office deposits, my keys to the office and file cabinet, and some mail that I needed to take to the post office this morning). I called Mr. Man and he told me where to meet him.

I dropped Lady Bug off at school, then went to meet Mr. Man. I got my stuff from him and was headed to the office. I decided, since I was a little behind schedule that I would come to the office and then go later to the post office. I was also taking a little different route to work because of where I had to meet Mr. Man.

I am stopped at a stop light with one car in front of me. I looked in my rear view mirror to see a woman driving a big SUV at about 35 mph right into the back of my car. I ended up pushing the car in front me into the intersection. It really munched the back of my van, but only a small dent in the front of my car and (thankfully) very little damage to the car I hit. The car that hit me was totaled, she had to get a tow truck. They couldn't even move it out of traffic it was so bad. She hit me hard!

The passenger in the car I hit was a woman who was 8 or 9 months pregnant -- just great! She told me she was on her way to the doctor anyway, but she said she felt ok -- phew!

So the officers take every one's statement and information and then they issue a citation to the woman who hit me -- no surprise there since she was admitting fault from the get go.

As the officer gives me the case number and tells me how to get a report he tells me I can leave the scene now. He also tells me that my day will get better. I told him how it didn't start off great and that if I hadn't forgot everything I would have been at work and missed that whole accident. He looks at me and says:

Everything happens for a reason. Maybe there was a worse accident up the road or maybe you needed to be here so that the pregnant woman didn't get hit harder and injured. A hit like that to their car would have done a lot worse damage than the bump you gave them. So think of yourself as the baby-buffer.

The baby buffer. There ya go. That's me. The baby buffer!!! Hee hee!

Growing up...

Spirit (7 years old) and I were at the store last night to pick up a few things for Lady Bug's school. About half way through the store he tells me he has to use the bathroom, I asked if he could hold it and he said yes. Then about 10 minutes go by and he asks me how much longer he is going to need to hold it because now he has to go #2, not just #1.

Now, I had a decision to make: he has never used a public bathroom alone so should I take him to the woman's bathroom? Or just stand outside the men's while he goes in alone.

I asked him if he would go in the woman's with me and he said he really didn't want to.

So, I walked him to the front of the store and stood outside the men's bathroom. I waited. I waited some more. I waited even more. Wait. Wait. Wait. No sign of him coming out.

I started to panic: what if some creep-o was in there before he went in and now is molesting my child? What if he is hurt and can't cry out for help? (ok, ok, I am a freak and totally dramatic, but it could happen!)

I popped my head just inside the door and hollered his name. No response. Now, my heart is racing! I say his name a second time. He answers back "What mom?" I asked him if he was ok and he said yes. But then there is a little voice:

"mom, there isn't any toilet paper in here."

Fortunately, just at that moment a gentleman tapped my shoulder wanting to use the restroom (and obviously having overheard our conversation) said he would get my son some toilet paper.

Spirit came out just a minute or two later, all in one piece. Telling me he didn't know how long to sit there or if he should just not wipe and come get me! I am so glad it all worked out! Boy I am relieved!

Back-to-school Fiesta

***UPDATED: I FINALLY added pictures!!! I was having
a terrible time getting the pictures to download so this is
the best I could do right now!***

As our own little "back-to-school kickoff" we had a celebration around our house Sunday night! I wanted to post pictures, but my camera batteries are dead so I will post the pictures later (sorry)!

The kids helped me decorate the dining room with crepe paper and some bulletin board decorations I found at the dollar store. Each kid wore a party hat that I made from a bulletin board border I found at the dollar store that said "Learning Zone" on it. I cut a number from black paper that reflected the year of school they are entering (so for Spirit 2 for 2nd grade and Lefty got a 1 and Lady Bug I cut "Pk" for preschool)

Then I made a special dinner with smoked beef brisket with BBQ sauce, zucchini-corn fritters, fresh fruit salad and for dessert I made brownies that I frosted with chocolate frosting and then wrote letters and numbers on the tops with yellow and white frosting.

During dinner I read books about going back to school or books simply about school. Then Mr. Man talked to them about what we expect out of them (respect for teachers, good manners, completed school work, etc.)

After dinner we all walked the route the boys will walk to school, although mom is being difficult and not letting them walk alone to school yet. The school is literally behind the house and we could stand on the deck and watch them all the way there, but I am still nervous.

Meet the teacher night

On Friday, the kids had Meet The Teacher night. They had been having more stomach issues all day so they were less than excited about going. By the time the event started they had not had a trip to the bathroom in several hours, so I decided we should go over to the school for just a few minutes.

We headed over to the school and met Lefty's teacher first. Very nice lady. She has a small class with only 5 boys. Eeek. Lefty wouldn't talk to her so we didn't stay long. She showed him his desk and where he would line up for school in the mornings.

Then we go into Spirit's classroom. His teacher is also very nice. We were the only ones in there at the time, so the teacher was really spending time with Spirit, the conversation went a little like this:

Ms. A: So this is your first year at this school?

Spirit: yes

Ms. A.: Well, I think you're going to make a lot of great friends and have a lot of fun here!

Spirit just smiled.

Ms. A.: Do you like math? Everyone likes math, right?

Spirit: No.

Ms. A.: Do you like reading?

Spirit: YES!

Ms. A.: You do! I love to read too! Do you like to run?

Spirit: Yes!

Ms. A.: Me too! I love to run. I jog every morning.

Then Spirit started rambling on and on about different things and she was listening and nodding. They were having a fun conversation (she was so sweet to let him ramble on and on).

Ms. A.: You like to talk don't you? That's ok because I like to talk to. Sometimes I talk too much, I bet you never talk too much do you?

Spirit: My mom says I talk too much sometimes.

Ms. A looked at me and we both laughed.

I proceeded to ask Ms. A. if she would allow Spirit to walk next door to pick up Lefty at the end of the school day so they can walk to the after-school program together. She said that would be no problem.
Then she looked at Spirit and said: You will have to remind me at the end of every day. Sometimes I forget, so give me a high five and then you can go to the after-school program. But you have to remind me ok?

Spirit: Ok. I will.

We mosey'd on our way back home. As soon as we got home Spirit called his dad at work and said:
Dad, you have to meet my teacher! She and I have so much in common! She likes to read and so do I! She forgets things and so do I! She likes to run and so do I! OH! And she talks a lot too dad, just like me! This is going to be a great year dad!

So much in common? What is that? I thought it was so cute and so funny! When Mr. Man got home we all went over to the school one more time so he could see their classrooms and meet the teachers. I was able to talk to Ms. A. without Spirit around and I told her what he said about how they have so much in common. She was so touched and said that was such a sweet thing for him to say!

I hope all my kids are having a good day on their first day of school today!

Triple Chocolate Brownies

I love chocolate and these definitely fill the bill. These are wonderful served warm with ice cream, but are also excellent the next day (if there are any left the next day)!!

Expectations of a preschooler

Mr. Man and I had to go to Lady Bug's preschool and have a "pre-admission interview". It was supposed to be a time for the teachers to get to know us and a time for us to get to know them. It was a formality and for the most part it was silly. They asked us questions like
"what is your form of discipline?"
"What is your daughter's favorite thing to do"
"Is there any area you feel your daughter is behind in developmentally?"
But the one question that made me chuckle was "What are your expectations of this class?" When we both hesitated in answering, the teacher said, "What I mean is: What do you want your daughter to walk away from here knowing or understanding most?" I joked and said "We expect her to be college-ready by this time next year."
I looked over to see the teacher frantically writing that down on our paper. I stopped her and said "no, no, no. I am kidding." She said "Oh.Ok. Well there are parents who expect their child to learn certain things or be able to accomplish certain tasks."
I replied to the teacher that at 3 1/2 years old I expect her to play and have fun. I expect her to enjoy going to school and I expect her to laugh and be happy while she is in school. I went on to explain that one of our reasons for choosing a preschool setting for her as opposed to finding a nanny or an in-home daycare is that I think Lady Bug will really enjoy all the different activities they offer (plus she is ready for preschool, to learn to write and recognize numbers, etc.). I certainly have no expectations of what she might learn though, my main objective is for her to have fun and make friends.

So that, my dear preschool teacher, is what I Expect!

Lunch Box sandwich idea

I try to do different things with the kids' lunches to keep them interesting and fun! I have cut the sandwich into what looks like a puzzle, I have used cookie cutters and cut shapes out of the center and then put it all back together. I always include a joke, riddle or a little note for them to read (click here for more ideas on that topic). I have even included a pencil and word scramble or mazes for them to do (especially on cold, wet days when I know they will be stuck inside).

BUT, recently I saw some cute ideas over at Gourmet Mom On-The-Go for some fun sandwich ideas. Go check it out, I know I am definitely going to try some of her ideas, they look so cute.

Last day with the nanny

Today is the last day with the current nanny. We have enjoyed her enthusiasm and the love for the kids this summer (despite the slip-n-slide in my bathroom) so we wanted to do something special for her. We took her out to dinner and gave her some thank you cards and of course we tossed in something that every college student needs, a grocery store gift card!

We will miss her very much and look forward to her coming to visit us at Christmas!

So tomorrow our niece will watch them -- the kids love going to her house and playing with her kids. (bad news for me is that I get to drive the 45 minutes to her house twice tomorrow!)

Friday I will take the day off and spend it with the kids as one last "whoo-rahh" before school starts.

Getting ready to go back to school. . .

August 25th is our big day! Each new school year is one big fat reminder that my babies aren't babies anymore and they are growing up. **mama weeps**

Since we moved into our new house, the boys will be starting a new school this year. In addition to that trauma, Lady Bug will be starting preschool **mama weeps**

I know she isn't off to the big K (kindergarten) yet, but it is still hard on me. She is my youngest. My baby. My baby is growing up! She will be in a preschool/daycare at a church near our house. She met her teacher and is very excited. I will drop her off at 8:30 or so on my way to work. Then Mr. Man will pick her up on his way home from work, about 5:10-5:15. She is very excited about the whole thing.

As for the boys: Spirit is starting 2nd grade and Lefty starts 1st grade. There is an Open House/Meet the Teacher event on Friday (22nd) and due to some daycare conflicts I will be taking the day off from work that day and plan to be at the Open House first thing. I am hoping we can bump into some other kids that will be in their class.

We started this week rescheduling the kids: you know how it is, in the summer you're up late and meal times get moved around (earlier or later or sometimes not at all!). So we are putting the kids to bed a little earlier each night this week and trying to get meal times back to where they will need to be for school hours (you know, breakfast served and done by 7:30 AM and dinner served and done by 6:30 PM). By Sunday night we are hoping to be back on track.

House full of sick-ies

It is bad enough when your 7 yo wakes you up at 3:30 am to tell you he threw up in his bed so you go and change his sheets and put him back to bed -- but it is even worse when you end up with the bug and the two of you are laying in your bed feeling all crappy and he has a bad case of diarrhea and doesn't get out the bed quick enough and poops in your bed.

Naturally Mr. Man and the other two kids were gone so I had to get up and clean up the bed feeling the way I did. I put Spirit in the bathtub to clean up while I changed my sheets then I crawled back into bed in hopes I could sleep some more, but all I could think of was the poop, and I could still smell it so I ended up changing my sweats (worried I must have gotten some on my clothes) and I moved downstairs to the couch.

Blahk!!

Quick and Easy Breakfast Tacos

With school starting for us we are back to needing quick and easy breakfast recipes. This one is nice because people can fix their taco as they get ready (which may or may not be at the same time as the other family members). For those of you who aren't familiar with breakfast tacos, they are similar to a breakfast burrito.

Breakfast Tacos
INGREDIENTS:
4 eggs
1/4 cup sour cream
4 small (8"-fajita size) flour tortillas
1/2 cup cheddar cheese, shredded
4 strips bacon
mild picante sauce

Fry bacon in a skillet. Drain on paper towel, then crumble and set aside. Beat eggs together in a small bowl. Add sour cream and salt and pepper to taste. Pour egg mixture into skillet and cook for a few minutes, then stir with a spatula and cook more until well cooked. When ready to serve, place scrambled eggs in the middle of the tortilla. Top with crumbled bacon, cheese, sour cream, and picante sauce. Fold over and seal with a little sour cream.

Very scary moment

Spirit (who is 7 1/2 years old) came running out of his room last night after he had been in bed only about 10 or 15 minutes. He was making a weird gurgling sound and holding his throat. Mr. Man and I rushed over to see him and were asking him what was wrong. He couldn't speak and was gasping for air. Even though I have taken CPR/First Aid I could not remember one thing! I panicked! So Mr. Man grabbed him and did the Heimlich maneuver and out flew a quarter. A quarter. As soon as the calmness was restored I asked him why there was a quarter in his mouth and he said he was holding it in one hand and he dropped it and it fell in his mouth and went right down his throat.

I am glad it didn't turn out worse than what it did. He is ok. No apparent damage.

Outgoing mail

I am not so sure what our postal carrier must be thinking about us these last couple of days. Lefty and Lady Bug have been leaving little presents in our mail box. They colored some pictures, painted some rocks and have even stapled pages together and wrote a book about delivering mail. Then they have placed the "gifts" in the mail box with a note that says "To: Mail person" and put the red flag up. Each night when we check for our "incoming mail" the presents are gone so obviously the mail carrier must be taking them.

I wonder what he/she must be thinking.

College Nanny

There are goods and bads to hiring a college student as a nanny:

Good: She has lots of energy
Bad: She has lots of energy

Good: She does crafts with the kids
Bad: She doesn't stop the kids from making a mess during crafts (like they used glitter glue in the living room on the carpet without protection under it) and she lets the kids get into my craft supplies (argh!)

Good: She is old enough to know right from wrong
Bad: She isn't old enough to have common sense about certain things

Guess what she allowed the children to do? A slip-n-slide in my bathroom. Yes, my bathroom upstairs was a slip-n-slide while I was at work. I came home, she was already gone and Mr. Man was on the phone. I went upstairs to use the bathroom and noticed a lot of water behind the toilet. I cleaned it all up and then noticed my bath mats were gone and all my towels (including the extras in the closet). Since Mr. Man was on the phone I asked Lefty if he knew why there was so much water on the floor in the bathroom.

Lefty: "Yes. All 3 of us took a bath and then we were splashing on the floor so we could slide better."

Me: "What do you mean 'so you could slide better'?"

Lefty: "We did a slip-n-slide in here."

Me: "In my bathroom?"

Lefty: "Yes. We went like this" he then proceeded to demonstrate how they did it.

Mr. Man told me that the nanny told him what she allowed and she told him she was just mad that she never thought of such a thing when she was young. (I told him that the reason she never thought of it is because her mother would have killed her!)

I told the kids that in the future that would not happen again. At this point, Spirit informed me that they also used my shampoo as bubble bath.

Nice.

**She sure beats the 50 year old nanny we had last summer that literally sat on the couch and talked on the phone all day long. Spirit would tell us things he was able to get away with because she wasn't paying a lick of attention to them!**

Weekend in Review

Saturday morning I let the kids be lazy and watch TV until 11:00 because it allowed me to get a lot done. I cleaned and did laundry, changed sheets, dusted and vacuumed. Then we all cleaned the playroom and selected some toys to donate to needy families. Then we drove to the drop-off location to donate the toys, went to the grocery store, headed home to make sausage dip and marinated asparagus to take to a party. Then the kids and I headed to the party and Mr. Man came later after he was done with work.

Saturday night we are getting ready to eat dinner and Lefty's lip started swelling. He told me his teeth hurt and he didn't want to eat. He had a blister looking thing on his gum which was getting larger and filling with pus (he actually got it 3 weeks ago and the dentist couldn't figure out what it was so she treated him with antibiotics but it never went away and we had a follow-up visit next week with her). We called the dentist and when she called us back (about 5:00 pm), she said it sounded like an infection and she called in a prescription for an antibiotic and then wanted to see him first thing today.

Sunday I took Spirit and Lady Bug with me to church since I was scheduled to work in the nursery. Mr. Man stayed home with Lefty because his face was so swollen and his eye was swelling shut too. We called the dentist again and she gave us some things to do to keep him comfortable until she could see him today. I was hoping she would see him yesterday, but Mr. Man said it probably would have cost us an arm and leg for the dental emergency!

Sunday proved to be a pretty lazy day due to the fact that Lefty wasn't feeling great. So we laid around and played games, watched movies and snacked all day. Spirit and I made some cookies (which apparently I left out an ingredient or maybe my baking soda was expired because the cookies flattened out terribly...still taste good though!)

This morning Mr. Man took Lefty to the dentist. They took more pictures and decided his tooth needed to come out. They gassed him and pulled the tooth. He was so brave. I am so proud of him. Mr. Man took him to Wal-Mart to get a new Lego set for being so brave!

I am so glad to have that done and now he can get healed. Bad news is the dentist said based on the xrays she doesn't think his new tooth will come in for another year or so. Oh well. It probably won't matter too much since several kids his age are already losing teeth so he will fit in just fine.

Oatmeal Chocolate Chip Cookies

While we were in Oregon my sister made Oatmeal Chocolate Chip cookies for our camping trip. They were so yummy. I decided for this week's recipe I needed to post a recipe for these cookies. I hope you enjoy.

Oatmeal Chocolate Chip Cookies
INGREDIENTS:
2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup rolled oats
1 cup unsalted butter, softened
1 1/3 cups packed dark brown sugar
2 eggs
2 tsp vanilla extract
2 cups semisweet chocolate chips (my sister did half chocolate chip and half butterscotch chips)

Preheat the oven to 300 degrees F. Grease cookie sheets. Stir together the flour, baking soda, salt and oats; set aside. In a medium bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Mix in the dry ingredients until well blended before stirring in the chocolate chips. Drop by heaping spoonfuls onto the prepared cookie sheet at least 3 inches apart. Flatten cookies to 1/2 inch thick. Bake for 21 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

We're home!

It feels so good to be home. The trip was fun though! The kids did really, really well on the road. They used the activity books and played games. Hardly any fighting, which was such a blessing to us! We left last Thursday morning, early and drove 13 hours to stay here. Can I tell you that we were treated like royalty?!!! I mean, us, the family of 5. Not at all that exciting, in fact we are down right boring. Certainly not royalty. We pulled up to pizza awaiting us. Then we slept in the coziest bed ever. E.V.E.R. Friday morning woke up to yummy blueberry muffins, spinach and egg frittata, fresh fruit, bacon, juice and milk. Was provided a very generous gift and all the love you could imagine. I mean, seriously, these people are the nicest people you could ever meet! (oh, and she decorates her house like a show home. It was beautiful! Even my husband commented on how nicely decorated it was and that is saying alot.)

Friday our drive was only about 6 hours to my mom's house in Portland, Oregon. One of my brothers, my oldest sister and my niece Ellen who is 29 and my nephew Simon who is 24 were all there too. We talked and laughed and ate and ate some more before fighting each other for the bathrooms to get ready for the wedding. We all drove to the wedding together. It was in the atrium of the World Trade Center downtown Portland. It was beautiful in there! My niece, who is pretty anyway, looked amazing!

Saturday, my husband and brother-in-law (father of the bride) got up and went out on the boat until about 1 or 2 while my sisters and I took all the kids and ran errands, preparing for the ocean camping trip. You would think 6 kids would be a bad thing for errand-running, but they got along real well and entertained each other!

Sunday we left Portland by 9 and got to Newport beach about 12:30. Set up camp and then the boys (the big boys) disappeared on the boat again. So I took the kids to the beach, where it was very windy and freezing cold. They enjoyed it though, I did not enjoy it as much. They played in the sand. Gathered shells and Lady Bug found 2 heart shaped rocks that are so cute!

We packed up camp Monday night and headed back to my moms while everyone else stayed at the beach. It was good to hang out with my mom for a little while longer. We left my moms about 9 on Tuesday morning and drove for 14 hours to finally stop for the night at a hotel. It was cheap, but it was fairly clean inside. We left there about 9 am Wednesday and rolled into our driveway about 4 or so in the afternoon.

I was able to tackle almost all of the laundry (yay for me!) and relax a little before bed! It is good to be home and not living out of a suitcase anymore!

Eatin' crow

We are still in Oregon on our trip, but I wrote this post before we left. I was hoping to be able to post some pictures or something of our trip at this time, but I guess that will have to wait until we get back because that isn't working out so good. In the meantime, please enjoy this little story:

Spirit (7 1/2 years old) is going through this phase where he knows more than everyone, including his mom and dad. It is about to drive us nuts. When we were getting ready for the trip, we were in and out of the house loading stuff while the kids played. Spirit came up to us and said "I just saw Miss Shirley drive by." Shirley is a dear friend of ours whom we haven't seen in 3 or 4 weeks. I told him there is no way she would just drive by without stopping. No way. He argued and argued, which has been pretty common in our house lately!

To prove our point Mr. Man called Shirley and asked her if she had been by our house. She said, she had indeed just driven by and she waved at Spirit but didn't want to stop and interrupt our packing!

Spirit started jumping up and down yelling "I told you I saw her! I told you!!"

Mr. Man told Miss Shirley she should have stopped anyway, that our house is always open no matter what we are doing and at the very least she could have talked with the kids while we packed.

I certainly hope that we made our point. I don't ever want someone to feel that they can't stop just because they didn't call first! I want my home to be open - all the time!

Helmets

Please, please, please tell anyone and everyone you know that does not wear a helmet when riding a scooter, motorcycle or bicycle to please wear one.
A few weeks ago someone we know (we didn't know her real well, but knew her well enough to be affected by her death) was killed in a scooter accident and about the same time my brother was also in a serious scooter accident and he survived. My brother was wearing a helmet but the girl who was killed was not. It saddens me so much.

The girl crashed and ended up fracturing her skull in 4 places. When they got her to the hospital she still had a heart beat but the tests indicated there was no blood getting to her brain. The following day her family decided to remove the resuscitator and four hours later, her heart stopped beating. She was 38 years old and the mother of 2 children.

In my brother's accident, he was following a truck and the truck suddenly pulled off the side of the road because there was something in the road and my brother couldn't maneuver around the debris quick enough and crashed. He broke a shoulder, his wrist on the opposite arm and had bruising and scrapes on the rest of his body.

I beg everyone to please wear helmets, it may save your life.

Smoked Turkey and corn salad

I tried this recipe this past weekend and it was delicious, satisfying and didn't heat up the house by using the oven!

Smoked Turkey and Corn Salad
INGREDIENTS:
3 cups (about 3/4 lb) diced, cooked smoked turkey breast
1 can (15.5 oz) black beans, rinsed and drained
1 1/2 cups fresh corn kernels or 2 (15 oz) cans sweet corn
1 cup cherry tomatoes, halved
1 cup diced bell peppers (any colors)
6 green onions, chopped
2 jalapenos, seeded and minced
1 avocado, peeled, pitted and diced
1 lime, juiced
1/2 c Italian dressing
1/2 tsp garlic salt
Fresh spinach

Combine all ingredients except spinach. Toss and chill until serving. Tear in some spinach leaves into a bowl, top with remaining salad ingredients.

This is yummy with some fresh french bread!
