Friday Recipe - Breakfast Fruit Cobbler

I love cobbler any time, but this one is so cozy on a crisp morning. I like mine with my coffee. Mmm Mmmmm mmmm good. This is also good as a brunch item.

Breakfast Fruit Cobbler
INGREDIENTS:

2 c fresh, canned or frozen fruit (I prefer to do mine with a mixture of raspberries, strawberries and blueberries)
2 Tbls sugar
1 tsp cornstarch
2 tsp water (or juice from the canned/frozen fruits)
1/2 tsp lemon juice
1/2 c quick-cooking oats
1/4 c flour
1/4 c brown sugar
1/2 tsp cinnamon (or 1/4 tsp cinnamon and 1/4 tsp nutmeg)
1/4 c cold butter

Place fruits in a baking dish sprayed with cooking spray (pie dish works great)
Mix together sugar, cornstarch, water and lemon juice. Pour over fruit in dish.
Mix together oats, flour, sugar, cinnamon. Cut in butter until crumbly. Sprinkle over fruit in dish. Bake at 375 degrees for 20-25 minutes or until filling is bubbly. Serve steaming hot with milk or cream.
