This is so tasty and I like to serve it with steamed rice and crusty bread. The below recipe serves 2, but it is very easy to double this recipe.
Bacon & Tomato Chicken Breasts
INGREDIENTS:
3 slices bacon, cooked and crumbled
2 boneless chicken breasts
1/2 of a small onion, chopped
1/4 lb mushrooms, sliced
1-2 cloves minced garlic
2 Tbls butter
2 tsp flour
1/2 c white wine
1 c chicken stock
1 tomato, chopped
In the same pan that the bacon was cooked in, saute chicken breasts and remove. Saute onion, mushrooms, garlic and butter until onions are translucent and then lower heat. Stir in flour to form a paste. Slowly add white wine and chicken stock; stirring constantly. Add tomato and cook over high until sauce thickens.
TO SERVE: Cover chicken with sauce and crumbled bacon on plate.
