Baked Oatmeal

This baked oatmeal tastes like an oatmeal cookie. Plan ahead because this needs to sit overnight before being baked! I prepared this the night before and then got up and popped it in the oven, headed up to take my shower then it was ready when the kids got up. It worked out perfect!

BAKED OATMEAL
INGREDIENTS:
1/3 c butter
2 large eggs
3/4 c brown sugar
1 1/2 tsp baking powder
1 1/2 tsp vanilla
1 tsp cinnamon
1/4 tsp salt
1 c milk plus 2 Tbls milk
3 c oatmeal (regular or quick cooking)

Melt butter. Grease 1 1/2 quart baking dish with cooking spray and drop in eggs. Beat eggs well. Add brown sugar, baking powder, vanilla, cinnamon and salt. Mix well, making sure there are no lumps. Whisk in butter and both measures of milk, then add oats. Stir well and refrigerate overnight. Bake uncovered at 350 for 35-45 minutes or until set in the middle. Serve hot with warm milk poured over.

I bookmarked this so long ago and finally tried it. My kids LOVE it. I have already made it twice since last Thursday!
