Golden Apple Bundles

This is a great recipe for the fall. Well, really for any time but I find myself making these in the fall more than any other time of the year. These are fairly easy to make and are an easy thing for kids to help make (which is always fun in our house!) In fact, I used to make these with my mom when I was younger and I have very fond memories of that!

Golden Apple Bundles
INGREDIENTS:
2 c chopped peeled apples (almost any ol' apple will do, but my favorites are Fuji and Jonathan)
1/3 c chopped walnuts
1/4 c packed brown sugar
1 Tbls flour
1/2 tsp lemon peel
1/2 tsp ground cinnamon
pastry for a double crust pie (I buy mine from the refrigerated section in the grocery store!)
Milk
Sugar

In a bowl, combine apples, walnuts, brown sugar, flour, lemon peel and cinnamon. Set aside. Roll pastry to 1/8" thickness. Cut into 5" circles (I use a Tupperware bowl as a guide). Spoon about 1/4 c apple mixture into center. Moisten edges with water; fold over and seal with fork. Place on a greased baking sheet. Bake at 450 degrees for 10 minutes. reduce heat to 400 degrees and bake 10 minutes longer. Remove from the oven and brush each with milk and sprinkle with sugar, return to oven for 5 minutes.

Sounds yummy! My kids sell apples for 4-H every year and we get a bushel at a time. I'm always looking for some way to use them up before they go bad. I'm adding this to said list!

Those apple bundles sound great! I have a ton of cored and sliced Gala apples in (you guessed it!) the freezer. Think they would do well for this recipe?

I'm so sorry for your loss. I can't even imagine going through something like that - my heart just breaks in two for my friend and her family and for you.

I see that you used to live in Portland and now live in Denver? My parents and siblings live in Hillsboro/Beaverton (we're down there all the time!) and my grandparents live in Colorado Springs. As a matter of fact, my parents are there visiting my grandparents now! They went to Aspen yesterday to check out the Aspens :)

Jamie- Yes, I do think your frozen Gala apples would work for this recipe! Thaw 'em out and mix it up! Let me know if you try it!

This sounds so good, but my little one can't have nuts. Think it needs the walnuts or would it be ok without? You know how somethings (like, zucchini bread, banana) need the nuts? For me anyway.

That sounds fantastic!!!

Sassy Stephanie- I actually just made some of these Saturday night and I didn't have nuts so I didn't put any in. They tasted just fine without them! So I say give 'em a try without!
