Friday Recipe - Cobb Salad Hoagies

I found this recipe here and it is such a wonderful summer time dish. I changed the recipe a tad to fit my families likes so below is the way we like it.

Cobb Salad Hoagies (4 sandwiches)
INGREDIENTS:

1 1/3 c cooked chicken or turkey, cubed
2 roma tomatoes, chopped
4 slices bacon, cooked, drained and crumbled
1 avocado, peeled and diced
4 Boston lettuce leaves (I use romaine)
4 hoagie buns, split, hollowed out and lightly toasted
2 hard-cooked eggs, chopped
Ranch dressing

In a medium bowl combine the chicken, tomatoes, and bacon. Pour just enough dressing over chicken mixture and toss to coat. Gently fold in avocado pieces. Place lettuce leaves on the bottom halves of the hollowed-out hoagie buns. Spoon chicken mixture atop. Sprinkle with chopped eggs. Top with bun halves.

**NOTE: Since I didn't make the dressing called for in the original recipe I wasn't sure how much dressing to use so I just put enough Ranch dressing in the chicken mixture to coat it a bit, not too much but not to little either.
