Oh so yummy! A good way to use up zucchini you've grown (or been so graciously been given by your neighbors - my neighbors give us tons of fresh veggies from their garden!)
Zucchini Corn Fritters
INGREDIENTS:
2 c flour
1 Tbls baking powder
1/2 tsp cumin
1/2 c sugar
1/2 tsp salt
pepper to taste
2 eggs, beaten
1 c milk
1/4 c melted butter
2 c grated zucchini
1 1/2 c fresh corn kernels cut from cob
1 c shredded cheddar cheese
oil for frying
Stir together flour, baking powder, cumin, sugar, salt and pepper. In a separate bowl, whisk together eggs, milk and butter. Stir egg mixture into dry ingredients. Stir in zucchini, corn and cheese and mix well.
Warm oil in a skillet over medium-high heat. Drop batter by tablespoonfuls into hot oil. Fry until crisp and brown, turning once.
