Crispy Mac - n - Cheese

If you want low fat/low cal.... stop reading now! This is far from it, but it is tasty! This actually isn't my favorite version, but my family loves it and asks for it often. The top layer of cheese gets crunchy (which I guess you could have figured out from the title...!)

Crispy Mac - n - Cheese

INGREDIENTS:
3 Tbls butter
12 oz extra sharp cheddar, grated
12 oz cheddar, grated
1 lb elbow pasta, boiled in salted water
1/8 tsp cayenne (optional)
2/3 c whole milk

Heat oven to 375. Use one tablespoon butter to thickly grease 9x13 baking dish. Combine cheese in a bowl. Set aside 2 cups for topping. Toss together pasta, cheeses, cayenne and salt to taste. Place in prepared pan and evenly pour milk over surface. Sprinkle with reserved cheese on top, dot with remaining butter and bake uncovered for 45 minutes. Raise heat to 400 and bake 15-20 minutes more or until crusty on top and bottom.
